Spinach Scrambled Eggs

Ingredients:
- 1 tablespoon butter
- 2 eggs
- 1 tablespoon liquid of choice (water, milk or milk substitute)
- 2 teaspoons Spinach CRYSTALS
Instructions:
- Melt butter in a non-stick skillet over medium heat.
- Whisk eggs and liquid of choice in a mixing bowl.
- Pour in egg mixture.
- Cook until the egg mixture thickens.
- With a spatula fold egg mixture to make large soft curds.
- Turn off heat and combine Spinach CRYSTALS with scrambled eggs.
- Serve immediately.
- Enjoy.

- Tip – convert it into a breakfast taco and dress it up with your favorite toppings and/ or add cracked black pepper to taste.
- Suggestion – plain unsweetened milk kefir for liquid of choice.
