Spinach Scrambled Eggs

Total Time: 7 minutes

Ingredients:

  • 1 tablespoon butter
  • 2 eggs
  • 1 tablespoon liquid of choice (water, milk or milk substitute)
  • 2 teaspoons Spinach CRYSTALS

Instructions:

  1. Melt butter in a non-stick skillet over medium heat.
  2. Whisk eggs and liquid of choice in a mixing bowl.
  3. Pour in egg mixture.
  4. Cook until the egg mixture thickens.
  5. With a spatula fold egg mixture to make large soft curds.
  6. Turn off heat and combine Spinach CRYSTALS with scrambled eggs.
  7. Serve immediately. 
  8. Enjoy.

Tips, Suggestions & Enhancements:

  • Tip – convert it into a breakfast taco and dress it up with your favorite toppings and/ or add cracked black pepper to taste.
  • Suggestion –  plain unsweetened milk kefir for liquid of choice.
  • Enhancement – change it up with Kale CRYSTALS (Note: flavors vary with each vegetable).
