Kale Smoothie

Serves: 1

Prep Time: 5

Cook Time: 0

Total Time: 5

Ingredients:

  • 4 ice cubes (equivalent to 1 cup)
  • 1 1/2 cup liquid of your choice (water, coconut water)
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon olive oil
  • 1 teaspoon fresh ginger root, minced
  • 1 handful of fresh cilantro (equivalent to 1/4 cup)
  • 2-3 tablespoons Kale CRYSTALS 

Instructions:

  1. Place all the ingredients in a high speed blender.
  2. blend until smooth.
  3. Serve immediately.
  4. Enjoy.

Tips, Suggestions & Enhancements:

  • Tip – place ice cubes and liquid into blender first.
  • Suggestion – use coconut water with aloe vera juice for liquid of choice.
  • Enhancement – add 1 teaspoon Blueberry CRYSTALS and/ or 1/2 teaspoon Aronia Berry (Note: flavors vary with each fruit).

Broccoli Pesto

Serves: Yield 1/2 cup

Prep Time: 5 minutes

Cook Time: 0 minutes

Total Time: 5 minutes

Ingredients:

  • 1 cup fresh basil leaves
  • 2 tablespoons pecans
  • 1 garlic clove, peeled
  • 1/4 cup olive oil
  • 1/2 cup parmigiano reggiano cheese, grated
  • 3 tablespoons Broccoli CRYSTALS

Instructions:

  1. With a food processor, pulse basil leaves, pecans, garlic.
  2. Slowly pour olive oil into mixture until smooth.
  3. Briefly combine cheese and Broccoli CRYSTALS.
  4. Store in the refrigerator or serve immediately. 
  5. Enjoy.

Tips, Suggestions & Enhancements:

  • Tip – store pesto for a couple of days.
  • Suggestion – use unsalted dry toasted pecan pieces.

Carrot Potato Salad

Serves: 4-6

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 10 baby red potatoes
  • 1 teaspoon vinegar
  • 1 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 4 celery ribs, finely chopped
  • 1 cup red onion, finely chopped
  • 1/2 cup pickle, finely chopped
  • 4 tablespoons Carrot CRYSTALS
  • 1/2 teaspoon fresh fennel fronds, finely chopped
  • cracked black pepper to taste
  • salt to taste

Instructions:

  1. Heat water to boil in a mid-size pot.
  2. Place potatoes into boiling water until tender.
  3. Meanwhile, whisk vinegar, mustard & mayo in a large mixing bowl.
  4. Combine celery, red onion, pickle & Carrot CRYSTALS into mixture.
  5. Drain potatoes in a colander.
  6. Cut potatoes into ¾ inch cubes.
  7. Combine potatoes into mixture. 
  8. Chill potato salad in the fridge for at least 30 minutes or until ready to serve. 
  9. Enjoy.

  • Suggestion –  use apple cider vinegar.
  • Suggestion –  use himilayan or sea salt.

Cauliflower Wild Rice

Serves: 4

Prep Time: 5 minutes

Cook Time: 30 minutes 

Total Time: 35 minutes

Ingredients:

  • 1 tablespoon butter
  • 1 shallot, finely chopped
  • 2 cups of water
  • 1 cup rice
  • 1 sprig thyme, minced
  • 2 tablespoons Cauliflower CRYSTALS

Instructions:

  1. Melt butter in a small saucepan at medium heat.
  2. Sautée shallot.
  3. Add water to a boil.
  4. Stir in rice to cook on medium-high heat. 
  5. Reduce heat to simmer, cover with a saucepan lid. 
  6. Cook until water is absorbed and rice is tender.
  7. Remove from heat to rest.
  8. Mix thyme & Cauliflower CRYSTALS into rice.
  9. Enjoy.

  • Tip – substitute broth for water.
  • Suggestion –  use brown or wild rice.

  • 2 cups mixed greens
  • 1/2 tablespoons red onion, thinly sliced
  • 2-3 tablespoons goat cheese, coarsely crumbled
  • 3 tablespoons water
  • 3 tablespoons Beet CRYSTALS

Instructions:

  1. Place mixed greens on a serving plate.
  2. Sprinkle red onion and goat cheese over mixed greens.
  3. Stir Beet CRYSTALS with water in a mixing bowl.
  4. Drizzle Beet CRYSTALS on top of salad.
  5. Chill or serve immediately.
  6. Enjoy.

Spinach Scrambled Eggs

Serves: 1

Prep Time: 2 minutes

Cook Time: 5 minutes

Total Time: 7 minutes

Ingredients:

  • 1 tablespoon butter
  • 2 eggs
  • 1 tablespoon liquid of choice (water, milk or milk substitute)
  • 2 teaspoons Spinach CRYSTALS

Instructions:

  1. Melt butter in a non-stick skillet over medium heat.
  2. Whisk eggs and liquid of choice in a mixing bowl.
  3. Pour in egg mixture.
  4. Cook until the egg mixture thickens.
  5. With a spatula fold egg mixture to make large soft curds.
  6. Turn off heat and combine Spinach CRYSTALS with scrambled eggs.
  7. Serve immediately. 
  8. Enjoy.
